OATMEAL RAISIN COOKIE

- ¼ cup vegetable oil
- ¾ cup butter or margarine
- ¾ cup granulated sugar
- ¾ cup brown sugar, packed
- 2 tsps vanilla extract
- 2 pcs eggs
- 2 cups all-purpose flour
- 1 ½ cups Golden Instants Oats Plus Vitamin A with Iron and Lysine
- 1 tsp baking soda
- 1 tsp iodized salt
- 1 cup chopped nuts (optional)
- 1 ½ cups raisins (optional)

- Pre-heat oven to 375°F (190°C).
- Mix thoroughly vegetable oil butter, sugar, egg and vanilla. Stir in remaining ingredients. (For softer, rounded cookie, add 1/4 to 1/2 cup all-purpose flour).
- Drop dough by rounded teaspoonfuls 2 inches apart unto greased baking sheet.
- Bake for 8 to 10 minutes or until light brown.
- Cool slightly before removing from baking sheet.
- Yields around 90 cookies.
